3 Days of Private Cooking Lessons in the Apennines
We will meet you in the morning in the beautiful city of Florence or Bologna. You will be driven out to Mount Fumaiolo and the home of your chef, Stefano Corvucci. His mountain retreat sits on the border of Tuscany, Emilia Romagna and Marche. You’ll stay at a hotel or apartment in the small village of Balze.
After a short rest, you’ll head to the kitchen begin your first lesson along with the chef as you prepare your evening’s meal. The next day will be a full day of cooking; lunch and then again dinner. On the third day you’ll cook through lunch and be returned to either Bologna or Florence late afternoon.
Stefano will teach you the culinary secrets of Pellegrino Artusi, the father of Italian cuisine. Writing only two decades after the unification of Italy, Artusi was the first to include recipes from all the different regions of Italy in a single cookbook. He is often credited with establishing a truly national Italian cuisine for the first time.
