The 4 weeks course is a special course tailored-made on your wishes and request. We can shape your cooking days according to your desire, we can focus on topics according to your needs / curiosities,
With this course you can really experience a lot of cooking, wine tastings, food tours, ingredients, farms and stores of Emilia Romagna.
To organize this course you’ve to discuss it directly to CIBO’s head chef Stefano Corvucci, with whom you’ll make a detailed program of your stay and of your classes.

5 days a week Monday to Friday plus 1 weekend on the Tuscan Mountains

Looking for a change of scenery?  Want to sharpen your culinary skills?  Whether you are a foodie or professional, 4 weeks in our immersion course is a way to dig deep into the traditions, culture and culinary aspects of Northern Italy.

 

You’ll spend your days in a professional kitchen under the tutelage of the Master Chef.  He’ll work with you to organize your day, select the ingredients at the local market and then prepare meals according to traditional techniques.

You’ll also spend time visiting the farms and factories of some of the best known foods in all of italy, Balsamic Vinegar, Prosciutto and Parmigiano Reggiano. You’ll spend time in the Apennine mountains touring charming medieval towns and cooking over a fireplace and in a 300 years old sone oven.

Imagine boning and cooking a whole rabbit, visiting a medieval castle on a mountain and sipping wines with a local winemaker.  You’ll spend time with the family and learn the history of the region. This is the experience that awaits you.
