The 4 weeks course is a special course tailored-made on your wishes and request. We can shape your cooking days according to your desire, we can focus on topics according to your needs / curiosities,
With this course you can really experience a lot of cooking, wine tastings, food tour, ingredients, farms and stores of Emilia Romagna.
To organize this course you’ve to discuss it directly to CIBO’s head chef Stefano Corvucci, with whom you’ll make a detailed program of your stay and of your classes.

WHEN

Morning: 8:30am – 2:30pm (Including Lunch)

Aperitive: 06:30pm

Dinner: 7:00pm

5 days a week between Monday to Friday 

EXPERIENCE

Meet every morning at CIBO at 8:30 and take a historic tour on route to the Bologna Middle Market with the Chef where you decide what to buy and cook.

After strolling and sampling through the market and purchasing best seasonal ingredients (Meat, Vegetables or Seafood) you return to the school and your culinary adventure begins.

Each day you will be preparing at least 8 delicious Seasonal Traditional Recipes, including Bolognese Sauce and 2 Handmade Pastas  using a 38 inch long Mattarello (rolling pin). 

1 Day Balsamic Tour and Cooking at the Vinegary

Meet at CIBO at 8:30 and take a historic tour on route to the Bologna Middle Market with the Chef where you decide what to buy and cook. We’ll then and visit the vinegary La Cà dal Non in English “the house of the grandfather” where Mariangela and her family will lead you to the discovery of the fascinating world of Traditional balsamic vinegar of Modena aged over 12 and 25 years. Here, after the visit we will be preparing a delicious meal using Traditional Balsamic Vinegar of Modena, Saba and the BALSAMOSaba sweet and sour condiment collection as main thread. The tour will last 2 hours and it will unlock the “secrets” of the production of this famous vinegar. You’ll walk in the ancient lofts where the product ages for many and many years and you’ll be guided through the tasting of these amazing vinegars and if you want you can shop them.

3 Days on the Tuscan Mountains and Ravenna

-Visit the splendid mountainous region of the Apennines, on the border with Tuscany and Marche. Here, away from the typical tourist routes, you will discover a fascinating, cozy and very romantic area, unveiling its treasures at every corner:

– Visits to the Sanctuary of La Verna, founded by St. Francis of Assisi, to Borgo San Sepolcro, home of the painter Piero della Francesca, Monte Fumaiolo.

– Visit Ravenna and its Basilica of San Vitale and its Byzantine Mosaics.

In 10 days you’ll be tasting and cooking with the great products Bologna is famous throughout the world for:

-30 months aged Parmigiano Reggiano

-hand-sliced 24 months Prosciutto di Parma

-12 and 25 years aged Balsamic Vinegar of Modena and Saba by the Vinegary “La Cà dal Non”

-white and black Truffle (if seasonal)

-Porcini and Chantarelles Mushrooms (if seasonal)

Along the cooking you snack on these great local products and taste great wines (drink responsibly).

The experience ends with Lunch. Free afternoon and Dinner at CIBO.

Afternoon Session – 04:00 p.m. – 07:30 p.m. + dinner

EXPERIENCE

The days are organized as follow:
Meet at CIBO at 8:30 then take an historical tour on route to the Bologna market area with the chef where you’ll decide what to prepare in the kitchen and do the shopping at market stands.
After strolling and sampling through the market and purchasing ingredients, you return to the school and the culinary adventure begins.
You will be preparing 6 delicious, complete granny’s meal , one for lunch and one for dinner, including handmade pasta using a 38 inch long mattarello (rolling pin).
You will be enjoying lunch and dinner… and a little bit of relax between the morning and the afternoon session.

After three days of cooking with a chef aside you you’ll really improve your cooking skills and techniques, and back home you’ll confidently create your own menu!
