Stefano Corvucci, CEO of the Culinary Institute of Bologna will be your private chef and guide during your stay.  He will take you on a journey to the places where the traditional Italian dishes were born. During this trip you and he will decide on the activities important to you. Maybe you want to spend all your time in the kitchen learning how to cook. Or perhaps you want to immerse yourself into the enchanting nature of the area. There are plenty of rich historical and cultural sites to choose from. And don’t forget the wineries!

 

What you can expect during your vacation:

 

Bologna or Florence

 

You will begin your adventure in either Bologna or Florence. We will meet you in the morning and take you on a short walking tour of the city and a visit to the local markets. Together we will plan our dinners and take advantage of the best that the season has to offer. We’ll discover the regional cured meats, cheeses, local seafood and seasonal vegetables. 

 

When we finish in the city, we will head to the Apennines and Stefano’s mountain retreat. You’ll check in to your hotel to relax a bit and then be picked up for dinner.  Stefano will welcome you into his home with a beverage and a cheerful smile. Together you will prepare the meal for the evening.

 

The Apennine Mountains

 

The mountain retreat is located near Mount Fumaiolo.  This famous peak is in the Emilia Romagna region close to Tuscany and Marche.  It is ideally located to take advantage of numerous activities to delight anyone’s appetite. Stefano will be your host taking where you want to go and preparing your daily meals. These are just a few of the many choices that await you:

This package is focused on cooking the great regional dishes of Italy. Your trip begins in Bologna or Florence where you will start your day with a visit to the local markets.  You and your personal chef will decide on the menu according to the ingredients of the season. You’ll then head to the Apennine Mountains and cook in Chef Stefano’s mountain retreat. You’ll find an old stone oven that was once used by the monks to feed the locals and a beautiful backyard picnic area with a babbling brook.  You’ll cook meat right on an authentic fireplace and engage in personal, hands-on cooking classes of the best Italian dishes.

 

You may decide to take a break from cooking and choose to visit the countryside:

The Sanctuary of La Verna (Tuscany) founded by St. Francis of Assisi;

The Borgo San Sepolcro (Tuscany), home of the painter Piero della Francesca, and the local museum with frescoes of the Resurrection of Christ and the Polyptych of the Misericordia;

Monterchi (Tuscany) where you will admire Piero della Francesca’s Madonna del Parto;

Places like Arezzo, Ravenna, San Leo, Urbino and Assisi.
