MORNING:

Meet at CIBO then we take an historical tour on route to the Bologna market area where we decide with the chef what we will be preparing that day.

Every experience is unique because we decide the menu and choose the ingredients based on products' availability and seasonality. After strolling and sampling through the market and purchasing ingredients, you return to class and the culinary adventure begins.

You will be preparing a delicious , complete, authentic, Bolognese meal using the famous Traditional Balsamic Vinegar of Modena, saba and cooked grape must condiment as main thread. Every CIBO class includes learning how to create hand-made pasta using a 38 inch long matterello (rolling pin).

Plunge into the perfumed unique flavour of one of our most fascinating and intriguing products of our land and discover the way a few drops can give a unique touch to your dishes.

Perfect for people who love to play in the kitchen with creativity, to balance flavours and to explore new taste shades.

It's a great day of culinary fun, food, tradition, vinegar and wine and it will be a day to remember!

We guarantee you will advance your cooking skills because you will be taught by English-speaking, professional restaurant chefs and you will not just be taught recipes, but rather, you will be learning cooking techniques that will generalize to all types of dishes.

AFTERNOON:
In the afternoon we leave downtown Bologna to travel to nearby Modena, famous for its

"Balsamico Tradizionale." We will taste Traditional Balsamic Vinegar ("liquid gold") of

Modena, aged over 12 and 25 years at the acetaia- vinegary La C dal Non (i.e. the

house of the grandfather). Mariangela and her family have been producing balsamico

since her grandfathers time.
Together with Mariangela well discover the ancient world of traditional balsamic vinegar.
You will learn how its made and how to taste it.


The products you will taste and experience here are:


- Traditional balsamic vinegar of Modena in its two versions: aged 12 years and 25 years + special selections

- Saba - longly cooked grape juice

- Balsabamo: a familysweet and sour condiment made with cooked grape must


Times: 8:30 am - 1:00pm plus lunch / 4:00pm - 8:30 pm and dinner
Each meal includes unlimited wine (drink responsibly).
