Sausage Ragu

Sauce-Ragù di Salsiccia

1 Large Onion
150g Tomato puree (3/4cup)
350g Sausage (3/4lb)
40g EVOO (3tbsp)
1 glass Dry white wine


Step 1
Mince onion and stir fry it in a saucepan with 3 tablespoons of extra virgin olive oil
Step 2
After 5 minutes add the sausage paste. Stir fry for about 10 min
Step 3
Add white wine
Step 4
Cook it covered on a slow heat for about 15 minutes
Step 5
Add the tomato puree and stir
Step 6
Cook for 20 to 30 minutes
Step 7
Taste it, as normally sausages are salted

Sometimes I make a version of this sauce without tomato and I add a few bay leaves. In any case, do not forget to sprinkle on some grated Parmigiano Reggiano.
With Sausage sauce you can season any kind of short pasta, such as penne, maccheroni and maccheroncini. To my taste, if you want to make hand made pasta for this sauce, it should be gnocchi or strozzapreti.
