The Main Difference:
Unlike many of the classes you find on the internet, we distinguish ourselves for three main reasons:
- You decide the menu, not us! In most half and full day classes, you go to the market and you decide on what dishes you will be cooking that day. Based on product availability and seasonality we will guide you in formulating a perfect, coordinated meal for your class.
- Our classes are really really small, so you get individual attention. No demonstrations. Hands on cooking lessons!
- Learn real, restaurant, healthy cooking skills in a friendly, informative atmosphere.
CIBO provides a real cooking/restaurant environment taught by trained restaurant chefs. You are not in someone’s apartment. You cook in a professional kitchen area. Our chefs are graduates of neighboring universities, cultured, friendly and helpful. They will work side-by-side with you to assure that when you complete the course you will be ready to duplicate back home what you learned in class. Having worked in restaurants, our chefs know the “tricks of the trade” and will impart to you skills to impress family and friends when you return home. Many of our dished build sauces from vegetables and their essences, rather than butter, olive oil, or cream; we are dedicated to healthy cooking.

What Will I Cook?
Almost all classes include learning how to make pasta by hand and how to make Bolognese ragu. And what is really unique about CIBO is that while each course has a its own unique food theme, the chef will work with you to customize what you prepare that day in class!! Have something you want to learn to cook? After you register, you can email us any specific dishes you might want to cook. If the ingredients are available we will teach you how to cook it (this works out best if you pick a full day class)
100% Hands On, Full immersion classes – Hours of Instruction
Many of the other culinary schools do a great deal of “demonstration” in classes. In other words, your class may include a four-course meal, but you are only preparing one or two courses. We don’t believe it makes sense for much of the meal to be demonstrated or done separately in another kitchen. You will have your own culinary, wooden work space and cook your dishes on your own individual stove top. With us, you will be 100% involved in preparing 100% of the meals. We list the hours of instruction –our 1/2 day and full day courses are generally longer than average. We don’t watch the clock and often people are having so much fun, the class goes longer than expected.
Our cooking classes are fun, informative and priced reasonably.
Compare vacation options carefully! We encourage you to browse other websites and look at the details of their offerings and itineraries, but look closely. Our pricing is in line with, or lower than other companies, and considering what you receive our value is much higher.
Our cooking classes are “hands-on.” The course is NOT series of demonstrations; you actually prepare your meal. This is not a lecture situation but rather you are at your own cooking station with your own cooking burner and you will be cooking everything that you eat. And remember, every meal with is accompanied with unlimited local wines (drink responsibly).
Every day is food oriented. Most full day courses include shopping and tasting at local stores in the market, talking about food, and cooking lunch and dinner.

CIBO is a company primarily dedicated to “Foodies.” We offer a unique, friendly, informative venue that is VERY different from other cooking programs. We immerse you in the “Italian culture” by exploring the foods of Italy. It is in the kitchen where stories are handed down from one generation to another. Smells of special dishes that grandma made transport you back in time. It is said that the olfactory sense of smell can trigger memories and enable you to visualize events long passed. We hope you take back the knowledge you acquire in our courses so that you can duplicate the tastes and smells of your culinary vacation with us.
Some of our past guests have become friends, email us often and return year after year. It is often reported that back home they rarely eat Italian food out now because what they make at home is better than what they can get at most local restaurants! Again, we are serious when we say, “We don’t want to meet your needs; we want to exceed your expectations!”

Diversity of Courses and How Much Instruction Do You Really Get?
We have one of the most diverse course offerings in Italy. From the most novice to expert, you will find our courses to be fun and informative. We have basic courses on pasta making (but did you ever make pasta by hand, with a 36″ long rolling pin, the way they have been doing it for centuries in Emilia Romagna?) to advanced. We specify the time length of each course, frankly its shocking to see many places on the net promoting a full day course for what we list as a half day course! Beginner cooks to professional chefs have praised us for adjusting our courses to meet peoples individual needs. So, don’t worry after you sign up for a course, come to Italy and meet with the chef/instructor he/she will make sure that your instruction is to your level of experience and will make sure you have a fun, pleasurable, learning experience.

Q: How do I know what courses you offer and when they are available?
A: Just go to the main menu and select “Cooking Classes” or click here. You will select your classes and shortly you will receive an answer about date availability.
Q: How are the CIBO chefs different from the other cooking school staff?
A: Firstly you are taught in a professional friendly atmosphere in an authentic cooking school setting. Mr. Stefano Corvucci, your chef/instructor was trained as an attorney at Bologna University but put that career on hold to pursue his real passion of preparing authentic Bolognese dishes based on recipes handed down by local Bolgonesi people over the last one hundred years. All chefs speak English and are highly educated professionals.
Secondly Stefano believes it is his personal pleasure to pass on his knowledge and skills so that you will become an ambassador of good taste for his beloved city of Bologna. He and his staff will teach you how to cook like a Nonna (grandma) on the one hand but will also teach you the “restaurant secrets” of restaurant presentation- “you eat with your eyes”.
At the core of learning at CIBO is the philosophy “We don’t just teach recipes, we teach techniques.” After attending CIBO cooking lessons you will be able to apply the cooking knowledge you obtained to every area of cooking. The old proverb of “Give a man a fish and he eats for a day, teach a man to fish and he can feed himself for life” holds true here at CIBO. As you stir each pot, mix each ingredient, you will learn the what, why and when of each step. This knowledge will generalize to all your cooking tasks, so you will leave CIBO as a competent, creative cook. Q: Do you offer vegan classes? Will you consider my allergies or food restrictions in recipe selection?
A: Absolutely YES. We are very flexible and able to accommodate any guest who would like to come to class but needs the menu adjusted to fit their dietary needs. Q: What program do you offer for my spouse/significant other if he or she doesn’t want to cook?
A: We can arrange for activities outside the class for your spouse/friends. If they would like to come to eat what the class has cooked it is available at E25/person and is listed as the last item on our course listings

Q: What is your cancellation policy?
A: Registration is a firm commitment to attend the class. Any changes must be made at least 30 days prior to the class to receive a full reimbursement. You may send someone in your place if you are unable to meet the cancellation deadline. If a cancellation/change is made within 13 – 7 days prior to class, you will only receive 1/2 of your reimbursement back. This includes switching your class to a different date. If you cancel or make a change within 7 days of class, you will not receive a reimbursement back for the scheduled class In regards to buying a class as a gift, we highly recommend you purchase a gift certificate instead of an actual class, as it is in the receivers best interest to be able to select the class that fits their schedule best and avoid any cancellation issues.
Q: How do I sign up for a cooking class?
A: Browse the classes, select which one(s) you like and check for availability. Once you fill out your request you will receive an answer to availability and be given instructions on payment.
Q: How long is a cooking class?
A: Unless otherwise noted, classes are approximately 3-9 ours in length depending on the course. We can recommend and/or book hotels for you in Bologna.
Q: Can anyone take a class at CIBO?
A: Yes, as long as they are 10 years & older (and accompanied by a paid adult). Children pay 1/2 of the listed prices. Kids cooking classes are available, must they must be accompanied by an adult.
Q: Will I receive a diploma, do I get to keep the apron I use at CIBO?
A: Yes, absolutely you will receive a certificate of participation suitable for framing and you get to take home your lovely CIBO apron!
Q: Is wine included in our meal.
A: YES, absolutely, almost every half or full day course includes unlimited wine (drink responsibly remember: a meal without wine is called breakfast!
Q: Do you offer a class in Gluten-Free Pasta or Gluten-Free Desserts or Gluten-Free Italian Food?
A: Yes and No. We can have a class for “gluten-free” dishes but we do NOT recommend this for SEVERE “CELIACS”- The kitchen is not totally free of flour in the air so we cannot guarantee a totally Gluten-Free environment…. We can show you how to make dishes that do not include gluten Arrivederci gltuen ciao deliziosa (Say so long to gluten and hello to great flavors! Our Gluten-Free CIBO course will consist of several great tasting dishes; all prepared without any gluten products. Learn how to true Emilia Romagna dishes that have great flavor but do not contain any gluten flour. Will we make great desserts like almond, chocolate, and jelly filled biscotti (twice baked) from rice flour that are great with tea or coffee. Enjoy learning how to make a real apple pie with a flaky crust and can you imagine, great tasting pasta using a mixture of “alternative” flours.
Learn how to take some old fashioned Bolognese recipes and adapt them to savory gluten-free creations. Prepare the grandma’s (nonna) ancient recipe of passatelli in brodo – soup that is traditionally made with. bread crumbs. You will learn the secrets of how to substitute a common gluten-free ingredient to give you same taste but without using bread . Other “gluten-free” pasta preparations include tagliatelle and cappelletti with ragu, shallots and bacon (strichetti con il sugo di scalogno e guanciale), a potato gnocchi with pesto and arugula (gnocchi di patata al pomodoro o al pesto di rucola). Now you can “bread” your dishes by learning how to prepare a corn meal preparation. You will learn a recipe for gluten-free brownies and an apple strudel that the you, your family and friends will rave about and all made gluten-free.
